How To Make Healthy Nut Balls

Nut balls can be very nutritious and easy to make. In this video, you’ll see a Date-Nut-Coconut Ball dessert that tastes great and you can enjoy without eating unhealthy sugars, white flour, etc. It’s one of our favorite healthy desserts.

Nut Ball Recipe

1 1/12 cups nuts (Cashew and Almonds)
2 TB Flax Seeds

Process them in a coffee grinder or food processor for around 40 seconds. Then add:

1 TB Cinnamon
1/2 tp Turmeric (optional)
1/2 tp Sea Salt
1/2 cup Shredded Unsweetened Coconut

Process together for 20 seconds. Then add

1 cup soft Dates (soak in water if they are not soft)

Process for around 1 1/2 minutes.

Form little balls with your hands or use a melon baller to shape. Roll them in shredded unsweetened coconut and refrigerate for 2 hours. Then enjoy!

How To Make Kale Chips

Kale is an outstanding green that is great to add to your diet. You can add it to salads, soups, casseroles and even make delicious tasting Kale Chips. I’ve always considered myself more of an ‘assembler’ of good foods rather than a ‘cook’. I’ve been asked to share my ‘recipe’ for making Kale Chips although I never measure anything and just use the ingredients on hand. This should give you some good ideas of how to make your own Kale Chips.

Kale Chip Ingredients

The Kale Chips ingredients were:

  • Organic Carrots
  • Dried Tomatoes (A raw beet is also good to use)
  • Lemon Juice
  • Nutritional Yeast
  • Soaked Cashews
  • Soaked Sunflower Seeds
  • Salt to taste
  • Bunch of Kale

I rarely measure ingredients but the picture above includes an approximate quantity of the ingredients for this batch of Kale Chips.

Heavy Duty Blender

For this recipe, you’ll need to use a high power blender like Blendtec or Vitamix. I don’t think a regular blender is going to be strong enough to pulverize the carrots and other ingredients.

Remove Kale Stems

I usually remove the woody Kale Stems with a knife. You can also just peel it off with your hand. It’s good to rip the leafy portions into smaller sizes… but not too small.

Coat Kale With Blended Ingredients

I moved the vegetable dressing into a glass bowl. It’s easier to coat the Kale with the the blended ingredients. You can also add herbs and spices, like Cayenne.

PlaceĀ  Coated Kale On Dehydrator Sheets

If you have a dehydrator, that’s the easiest way to dry them. I hear you can also use an oven at the lowest temperature. Then, instead of letting them dry all night, you should probably check them after an hour or two to see if the Kale Chips are dry.

Flip The Kale Chips

If you have used the dehydrator sheets, the Kale Chips will need to be flipped to dry the other side. I usually flip them in the morning and then the Kale Chips are ready a few hours later. ENJOY!
